Tiger Prawns in Tomato Sauce

I’ve never been a massive fan of prawns. I kinda think they’re more effort than they’re worth... but my wife loves them so we’ve had to meet half way. And by half way I mean I cook up a delicious sauce and she peals the prawns. You can use this tomato sauce as a condiment to any protein dish or pasta. Delicious.

Ingredients

  • 20 MSC Tiger Prawns (or any MSC prawn) peeled
  • 1 small brown onion - finely chopped
  • 3 garlic cloves - finely chopped
  • 1 long red chilli - finely chopped
  • 3-4 anchovy fillets - roughly chopped
  • 600g tin toms (unsweetened)
  • 1/2 cup passata
  • 1 cup red quinoa - washed and drained
  • pinch sea salt
  • pinch black pepper

  1. In a large fry pan fry off the onion, garlic and chilli in the olive oil until they begin to soften (3-4mins) (low heat)
  2. Add the anchovies, tin toms and passata
  3. Allow to gently simmer for 10 minutes or until it reaches a consistency you’re after
  4. To make the quinoa place a cup of quinoa (washed and drained) in 1.5 cups of salted boiling water
  5. Allow to return to the boil
  6. Turn the heat down to lowest and pop the lid on for 15 minutes
  7. After 15 minutes remove for the heat and allow to sit for 5 minutes with lid on
  8. Remove the lid after 5 min and lightly fork through
  9. Add the prawns to the tomato sauce and allow to cook until opaque (3-4 minutes)
  10. With 1 minute left to cook the prawn throw in 3-4 tbs of the cooked quinoa
