Roasted Bone Marrow w Chimichurri
I was one of those kids who loved to suck the marrow out of chops. But I understand that not everyone can appreciate a dish purely dedicated to bone marrow. Now before you put your hand up and say that’s me, let me enlighten you on how GOOD FOR YOU bone marrow is. It is FILLED with collagen. You know that stuff that people pay money to have injected into their face to stay looking young? Yeah, that stuff. So technically if you took up eating bone marrow and gave up injectables you’d probably come out on top. Plus, its rich in glucosamine, a compound that helps against osteoarthritis, relieves joint pain, and reduces inflammation in the joints. Did I mention it was delicious? Go on, try it. I dare you.

8-12 beef bones w marrow cut into section or lengthways

2 tbs olive oil

1/2 bunch fresh coriander (dressing)

1/2 bunch fresh parsley (dressing)

3-5 mint leaves (dressing)

1 green chilli (dressing)

5 tbs olive oil (dressing)

2 tbs red wine vinegar (dressing)

pinch sea salt
-
pinch black pepper
Method:
- Pre Heat oven to 200C
- Place your bones on a baking tray
- Drizzle with olive oil and season
- Thrown in the oven for 15 mins or until the bone begins to bubble
- Meanwhile thrown all the ingredients for the chimmichurri in a blender
- Blitz for 20 secs or until fully combined and remove from the jug
