Raspberry & Choc Ice-Cream
I made this yesterday for a bunch of mates and it went down a treat. They even thought it was store bought from Messina. I kid you not. Ice cream doesn’t need a whole lot of sugar in it to taste good. This has just enough to take the tartness out of it and it’s creamy enough to go for round two. Trust me, I’m not a big ice cream kinda guy and I dig this. Here I go making your day again. I scream, you scream, we all scream for Keto ice cream!
4 whole eggs
4 egg yolks
3 tbs vanilla extract
3 tbs coconut oil
3 tbs MCT oil
100g Grass fed Butter
3/4 cup frozen raspberries
1/2 cup cacao
1-2 tsp honey
Here’s how it rolled:
- Throw all the ingredients into a blender and blitz for 20-30 seconds or until mixture is lump-free
- Remove from the blender and place in a freezer-safe container
- Place in the freezer
- Remove from the freezer 5-10 minutes before serving
- Top with some toasted nuts
- Serve and enjoy
