One Pot Chicken
Feeling lazy? Got a cold? Cooking for friends on a budget? Here’s your go to guy! This simple 6 step chicken dish is undeniably good for you and super easy to make, and if I wasn’t an advocate for low-carb I’d say buy yourself a nice loaf of sourdough bread, lather some grass-fed butter on it and soak up all those delicious juices! BUT… we all know I’m a low-carb advocate so I won’t encourage you to do that. (Just remember, what I don’t know, doesn’t hurt me ;)) My wife requests this often and it always lands me in the good books.

Ingredients

1 whole organic chicken
-
2 brown onions – peeled and halved
-
4 garlic cloves – peeled and lightly smashed

1 leek – trimmed and chopped
-
4 carrots – trimmed and chopped
-
2 bay leaves
-
2 celery stalks – trimmed and chopped
-
1 sprig of thyme
-
1tsp black peppercorns
-
¼ bunch fresh parsley
-
1000ml chicken broth
Method:
- Place the whole chicken in a large saucepan or stockpot
- Cover with broth (add additional water if necessary) and bring to the boil
- Reduce to a simmer and cook for 35 mins (skim off any scum from the surface)
- Add the remaining ingredients and cook for a further 30 mins
- Remove from the heat and season
- To serve, remove some of the chicken meat and veggies as well as some broth into a bowl
