Green Salad w Nuoc Cham

A fresh little salad with a tangy chilli twist. Light, delicious and brain power food.

Ingredients

  • 3 medium avocados, sliced
  • 4 shallots, trimmed and sliced
  • 2 little gem lettuces, leaves trimmed
  • 1/4 bunch coriander, roughly chopped
  • 1/4 cup pepitas
  • 6 Thai basil leaves, roughly chopped
  • 4 tbs Nuoc Cham (see 'dressing' ingredients)
  • 1 small red chilli, finely chopped (dressing)
  • 1 garlic clove, finely chopped (dressing)
  • 1 tbs finely chopped ginger (dressing)
  • 1 tbs fish sauce (gluten free) (dressing)
  • 1 tbs honey (dressing)
  • 2 limes - juiced (dressing)

This a light salad, which will work well as a side or if you’d like it to be a more robust and hearty meal then simply add some sardines or tuna

Here’s how it rolled:

  1. In a large mixing bowl, combine all the ingredients for the salad and gently toss together.
  2. Add the Nuoc Cham (see below) dressing and lightly toss again.
  3. Season with salt and pepper, and serve.

Nuoc Cham (dressing)

  1. Combine all the ingredients and place in a small jar and shake vigorously
  2. Set aside until needed
