Green Salad w Nuoc Cham
3 medium avocados, sliced
4 shallots, trimmed and sliced
2 little gem lettuces, leaves trimmed
1/4 bunch coriander, roughly chopped
1/4 cup pepitas
6 Thai basil leaves, roughly chopped
4 tbs Nuoc Cham (see 'dressing' ingredients)
1 small red chilli, finely chopped (dressing)
1 garlic clove, finely chopped (dressing)
1 tbs finely chopped ginger (dressing)
1 tbs fish sauce (gluten free) (dressing)
1 tbs honey (dressing)
2 limes - juiced (dressing)
This a light salad, which will work well as a side or if you’d like it to be a more robust and hearty meal then simply add some sardines or tuna
Here’s how it rolled:
- In a large mixing bowl, combine all the ingredients for the salad and gently toss together.
- Add the Nuoc Cham (see below) dressing and lightly toss again.
- Season with salt and pepper, and serve.
Nuoc Cham (dressing)
- Combine all the ingredients and place in a small jar and shake vigorously
- Set aside until needed
