2 tsp shrimp paste

2 shallots – chopped

1 green mango - peeled and flesh julienned

1 red onion – sliced

350g cherry tomatoes – halved

1 long green chilli – deseeded and finely chopped

1 bird’s eye chilli – finely chopped

1 lime - juiced
-
1 tsp honey
-
1/4 bunch bunch coriander – leaves picked

1/4 bunch mint – leaves pick Method
Method:
Here’s how it rolled:
- Sauté the shrimp paste in a fry pan for 1 minute
- Remove from the heat
- Combine the lime juice, honey and shrimp paste in a small bowl – add more lime if needed
- Combine all the ingredients, including the dressing in a bowl and gently toss
- Season, serve and enjoy.
- Add some toasted peanuts if you wish
