Green Mango Salad

I first tried this on a trip to Thailand. Such a delightful little dish. Sweet and tangy and light and easy. Granted I had a whole fish to accompany it but I’m greedy. This is perfect as a light meal... or as a side. ;)

Ingredients

  • 2 tsp shrimp paste (dressing)
  • 2 shallots – chopped
  • 1 green mango - peeled and flesh julienned
  • ½ red onion – sliced
  • Large handful of cherry tomatoes – halved
  • 1 long green chilli – deseeded and finely chopped
  • 1 bird’s eye chilli – finely chopped
  • 2 lime - juiced (dressing)
  • 1 tsp honey (dressing)
  • ¼ bunch coriander leaves picked
  • ¼ bunch mint leaves pick

  • Sauté the shrimp paste in a fry pan for 1 minute
  • Remove from the heat
  • Combine the lime juice, honey and shrimp paste in a small bowl – add more lime if needed
  • Combine all the ingredients, including the dressing in a bowl and gently toss
