Green Mango Salad
I first tried this on a trip to Thailand. Such a delightful little dish. Sweet and tangy and light and easy. Granted I had a whole fish to accompany it but I’m greedy. This is perfect as a light meal... or as a side. ;)

Ingredients

2 tsp shrimp paste (dressing)
-
2 shallots – chopped
-
1 green mango - peeled and flesh julienned
-
½ red onion – sliced
-
Large handful of cherry tomatoes – halved
-
1 long green chilli – deseeded and finely chopped
-
1 bird’s eye chilli – finely chopped
-
2 lime - juiced (dressing)
-
1 tsp honey (dressing)
-
¼ bunch coriander leaves picked
-
¼ bunch mint leaves pick
Method:
- Sauté the shrimp paste in a fry pan for 1 minute
- Remove from the heat
- Combine the lime juice, honey and shrimp paste in a small bowl – add more lime if needed
- Combine all the ingredients, including the dressing in a bowl and gently toss
