Granola with Berries
YUM! Who doesn’t love granola?? Ummm… everyone!? Der. That’s because it’s usually covered in honey or sugar. This one, however, is not. It’s low carb, gluten free and keto friendly and I’m going to so far and say, even my father-in-law loves this granola and let me tell you, he is THE world champion granola connoisseur. He, like many, is under the impression that most granolas and mueslis are good for him. But, sadly, he is wrong. Most are high in carbs, covered in sugars and baked with the not good fats. This however is 100% guilt free and 100% delicious.

Ingredients

2 cups coconut flakes

½ cup pepitas

½ cup sunflower seeds

½ cup walnuts

½ cup pecans

2 tablespoons linseeds

½ cup macadamias

1 tablespoon cinnamon

1 tablespoon allspice
-
2–3 tablespoons coconut oil

1 tablespoon honey
-
1 cup coconut yoghurt, to serve

1 cup fresh or frozen berries, to serve
Method:
- Preheat your oven to 150°C and line two baking trays with baking paper.
- In a large mixing bowl, combine all the dry ingredients including the spices. Add the coconut oil and honey and combine thoroughly.
- Spread the granola evenly onto the baking trays and bake for 35 minutes or until browned and toasted (swapping trays at the midway point).
- Remove from the oven and allow to cool. Serve with coconut yogurt and berries
