Easy Project Bolognese w Brussels

Growing up brussels were the one veg left on my plate much to mums frustration. I’d often try to slip them to our dog under the table when mum wasn’t watching but the dog wasn’t very interested either. Anyway un-like my mums unseasoned boiled brussels (sorry ma!) this recipe is full of flavour.

Ingredients

  • 500 grams grass fed beef mince
  • 1 tbs olive oil
  • 1/3 cup bone broth
  • 1 bunch parsley - stalks finely chopped
  • 1 brown onion - roughly chopped
  • 3 garlic cloves - roughly chopped
  • 1 long red chilli - deseeded and finely chopped
  • 600g tin tomatoes
  • 1/2 cup passata
  • 2 tsp smokey paprika
  • 1 tsp caraway seeds
  • 1 tsp cumin
  • 120g brown mushrooms - roughly chopped
  • 2 carrots - chopped or grated
  • 150g brussel sprouts - halved
  • pinch sea salt

Not your traditional bolognese clearly but packs a yummy punch.

  • In a pan heat the fat on a medium heat, add the onion, garlic and coriander stalks. Cook off until the onions begin to soften.
  • Add the spices and chilli and cook for a minute.
  • Turn the heat to high and add the mince and keep turning until the mince has browned, then reduce the heat.
  • Add the tomatoes, broth, passata, carrots then mushrooms, brussels and cocao and allow to simmer for 15 -20 mins.
  • Season to taste.
