Ingredients

  • 500 grams grass fed beef mince
  • 1/3 cup bone broth
  • 1 bunch parsley - stalks finely chopped
  • 1 brown onion - roughly chopped
  • 3 garlic cloves - roughly chopped
  • 1 long red chilli - deseeded and finely chopped
  • 2 tin tomatoes
  • 1/2 cup passata
  • 2 tsp smokey paprika
  • 1 tsp cocao
  • 1 tsp caraway seeds
  • 1 tsp cumin
  • handful brown mushrooms - roughly chopped
  • 2 carrots - chopped or grated
  • handful brussel sprouts - halved

Here’s how it rolled:

  • In a pan heat the fat on a medium heat, add the onion, garlic and coriander stalks. Cook off until the onions begin to soften.
  • Add the spices and chilli and cook for a minute.
  • Turn the heat to high and add the mince and keep turning until the mince has browned, then reduce the heat.
  • Add the tomatoes, broth, passata, carrots then mushrooms, brussels and cocao and allow to simmer for 15 -20 mins.
  • Season to taste.
