Easy Project Bolognese w Brussels
500 grams grass fed beef mince
1 tbs olive oil
1/3 cup bone broth
1 bunch parsley - stalks finely chopped
1 brown onion - roughly chopped
3 garlic cloves - roughly chopped
1 long red chilli - deseeded and finely chopped
600g tin tomatoes
1/2 cup passata
2 tsp smokey paprika
1 tsp caraway seeds
1 tsp cumin
120g brown mushrooms - roughly chopped
2 carrots - chopped or grated
150g brussel sprouts - halved
pinch sea salt
Not your traditional bolognese clearly but packs a yummy punch.
- In a pan heat the fat on a medium heat, add the onion, garlic and coriander stalks. Cook off until the onions begin to soften.
- Add the spices and chilli and cook for a minute.
- Turn the heat to high and add the mince and keep turning until the mince has browned, then reduce the heat.
- Add the tomatoes, broth, passata, carrots then mushrooms, brussels and cocao and allow to simmer for 15 -20 mins.
- Season to taste.
