250 ml coconut cream

1 green apple, shredded

2 small carrots, grated

½ cup walnuts, crushed

¼ cup pepitas

¼ cup hemp seeds

½ cup shredded coconut

1 zest Lemon

¼ cup blueberries
Method:
This great breakfast item, which is still keto friendly but perhaps pop it up your sleeve for special treats due to the carbs in the apple. Plenty of fat from the coconut cream and seeds but also some sweetness from the apple and carrots makes this delicious.
Method
- Chill the coconut cream in the fridge for a minimum of 2 hours. Drain the watery component from the solid cream.
- In a large mixing bowl, combine the apple, carrot, walnuts, pepitas, hemp seeds, and shredded coconut.
- Combine the coconut cream with the lemon zest.
- Place alternate layers of the apple/carrot mix and coconut cream in a serving glass to create a beautifully layered stack. Top with blueberries, and serve.
