Ingredients

500g chuck steak (grass fed/finished or regenerative if poss)

1 tbs ghee

6 garlic cloves - chopped

4 red chilli - chopped

3 red onion - finely chopped
-
2 red capsicum - deseeded and chopped
-
15g fresh coriander (stalks and leaves chopped separately)

1 tsp cumin
-
1 tbs coriander powder
-
2 tsp paprika
-
1 tbs garam masala
-
1 tsp turmeric
-
400g tinned tomatoes
-
6 ripe tomatoes
-
120mls beef broth
Method:
- Heat the ghee on a medium heat
- Add onion, garlic and ginger, coriander stalks, and chill and fry off for 2-3 minutes
- Add all the spices and stir before adding the beef and stirring ensuring the beef is coated
- Brown off the meat before adding the capsicum, tin toms, fresh toms and broth
- Reduce heat, put the lid on and cook for 80 minutes
- Remove the lid and allow curry to thicken – approx 20 mins
- Remove from the heat – add fresh coriander leaves
- serve
