Ingredients

  • 500g chuck steak (grass fed/finished or regenerative if poss)
  • 1 tbs ghee
  • 6 garlic cloves - chopped
  • 4 red chilli - chopped
  • 3 red onion - finely chopped
  • 2 red capsicum - deseeded and chopped
  • 15g fresh coriander (stalks and leaves chopped separately)
  • 1 tsp cumin
  • 1 tbs coriander powder
  • 2 tsp paprika
  • 1 tbs garam masala
  • 1 tsp turmeric
  • 400g tinned tomatoes
  • 6 ripe tomatoes
  • 120mls beef broth

Method:

  • Heat the ghee on a medium heat
  • Add onion, garlic and ginger, coriander stalks, and chill and fry off for 2-3 minutes
  • Add all the spices and stir before adding the beef and stirring ensuring the beef is coated 
  • Brown off the meat before adding the capsicum, tin toms, fresh toms and broth 
  • Reduce heat, put the lid on and cook for 80 minutes
  • Remove the lid and allow curry to thicken – approx 20 mins
  • Remove from the heat – add fresh coriander leaves
  • serve
