Slow-Cooked Tomatoes w Garlic and Spinach

This recipe is one which has been on high rotation and serves as a snack or an accompaniment to a protein dish.  In addition it could be a larger dish with some white fish cooked and flaked in - mmmm' delicious!! This loose and rustic dish makes for delicious lunch.  The key is to not rush the garlic, allow it to sit in the fat and cook for a while on a low heat, as it begins to soften then add the other ingredients as per recipe.  The fat will take on the nuttiness and sweetness of the garlic”

Ingredients

  • 6 cloves garlic - peeled (slightly crushed)
  • 2 tbs olive oil
  • 2 tbs ghee
  • 1 punnet cherry tomatoes
  • I bunch English spinach - roughly chopped
  • 1 lemon - juiced
  • pinch sea salt
  • pinch black pepper

Method:

  • Heat the olive oil and ghee in a fry pan on a low heat
  • Add the garlic and cook for 6 minutes
  • Add the tomatoes and pop the lid on
  • Cook for further 6 minutes
  • Add the chopped spinach and remove the lid
  • Cook for further 1-2 minutes
  • Remove from the heat
  • Add squeeze of lemon and season
