Slow-Cooked Tomatoes w Garlic and Spinach
This recipe is one which has been on high rotation and serves as a snack or an accompaniment to a protein dish. In addition it could be a larger dish with some white fish cooked and flaked in - mmmm' delicious!! This loose and rustic dish makes for delicious lunch. The key is to not rush the garlic, allow it to sit in the fat and cook for a while on a low heat, as it begins to soften then add the other ingredients as per recipe. The fat will take on the nuttiness and sweetness of the garlic”

Ingredients

6 cloves garlic - peeled (slightly crushed)

2 tbs olive oil

2 tbs ghee

1 punnet cherry tomatoes

I bunch English spinach - roughly chopped

1 lemon - juiced
-
pinch sea salt
-
pinch black pepper
Method:
- Heat the olive oil and ghee in a fry pan on a low heat
- Add the garlic and cook for 6 minutes
- Add the tomatoes and pop the lid on
- Cook for further 6 minutes
- Add the chopped spinach and remove the lid
- Cook for further 1-2 minutes
- Remove from the heat
- Add squeeze of lemon and season
